Instructions
1. Marinate pork
Cut pork into slices. Mix the pork slices with salt, freshly ground black pepper, ginger juice, soy sauce, cooking wine, or spices to your taste. Marinate for at least 30 minutes.
2. Make rice flour
Fry grain rice, glutinous rice, bay leaf, cinnamon stick, and star anise slowly until the rice turns slightly brown. Keep moving the mixture while frying.
Blend the slightly fried rice mixture into coarse flour. You can take out the bay leaf, cinnamon stick and star anise before blending the rice.
3. Coat the pork
Coat the marinated pork slices with the rice flour. Mix with some oil.
4. Make the dish
Cut sweet potatoes into slices, and lay them all over the bottom and sides of a deep bowl.
Lay the coated pork slices above the sweet potato slices.
5. Steam the dish
Put steam rack in a pan, add water and bring it to boil.
Put the deep bowl on the rack and steam over low heat for 50 minutes.
